Chicken, shrimp, herbs with hot spices
A top-notch item for takeouts. Stir lemongrass, garlic, and ginger at medium-high heat. Stir in chicken broth and bring to a boil and then strain the chicken broth. Discard lemongrass, garlic, and ginger. Heat vegetable oil over medium heat. Add the chicken and mushrooms. Shake in red curry paste, fish sauce, and lime juice. Add chicken broth and coconut milk. Remove excess oil and fat. Add red onion into the chicken mixture and cook it until softened. Take off the heat and add the cilantro. Serve with cilantro and fresh jalapenos.
