Chicken Tikka Masala
Boneless white meat chicken simmered in a tomato & onion sauce.
Mix lime juice, yogurt, and curry powder. Season with salt and black pepper, then add chicken. Coat and marinate. Lightly spray oil and place over medium heat. Add onion, garlic, ginger, chili pepper, cinnamon, cumin, and curry powder; cook. Stir in tomato paste and water. Bring to a boil, reduce heat to low, and simmer. Meanwhile, thread chicken pieces and remove the marinade. Spray a little oil on the chicken and grill. Remove chicken from skewers and add cooked chicken to sauce. Stir in yogurt and garnish with cilantro. Serve with basmati rice.
