Mixed Vegetable Soup (Single)
A meat-free dish ditches your vegan worries. Heat olive oil in a soup pot. Add onion, carrot, and celery. Add broccoli or cauliflower, potato, leek (if using), bay leaf, and thyme. Throw in a generous pinch of salt. Bring soup to a boil. Simmer the soup until the vegetables go tender. Place half the soup in a blender or food processor and puree. Return pureed soup to pot. Add remaining vegetables of your choice. Cook until greens are tender. Season with salt and pepper and serve.
