Tom Yum Soup (Single)
Make shrimp oil from whole shrimp for the right flavor. The oil comes from sauteeing shrimp heads in oil. Add the oil to the skillet and a generous pinch of salt. Sauté the shrimp heads in the oil, cooking until red and crispy. Smash the lemongrass, kaffir lime leaves, onion, chilies, and galangal. Simmer. Place the aromatics in a medium soup pot and add water. Simmer until the broth smells fresh and fragrant. Shrimp It Up. Add the mushrooms, shrimp, and fish sauce. Cook the shrimp, stirring in the shrimp oil and lime juice.
